Basic Cake Pops Recipe
Cake pops are easy to make and can be rolled, shaped and decorated for many occasions. This simple recipe uses a box cake mix and frosting that are dipped in candy melt wafers. They can be shaped into bite-size balls or served on a lollipop stick.
From double chocolate- fudge to salted caramel and dulce de leche, cake pops can be made in a variety of flavor combinations. I used German chocolate cake with coconut pecan frosting to make these simple cake pops. Coat with white chocolate or colored candy melts and decorate with nuts, sprinkles, etc. and the possibilities can be endless.
You will Need
- Box cake mix of your choice
- Frosting, icing
- flavoring, extract
- 1/4 cup of seedless raspberry or apricot preserves (optional)
- confectioners sugar or cocoa powder
- chocolate couvetour, white chocolate or candy melts
- 9″x 13″ baking pan
- lollipop sticks
- Styrofoam Holder
- DoughEZ pastry kit
Bake the cake as directed on the box, using a 9″x 13″ baking pan. Let cool. Crumble cake in large bowl or stand mixer. Add approximately half a container of frosting to the bowl along with 1 tsp of vanilla or flavoring extract, and 1/4 cup of cocoa powder. Mix until thoroughly combined and starts to pull away from the sides of bowl. Form a soft dough ball. The mixture should be moist enough to hold together and be rolled into a ball. If mixture is too wet, add additional confectioners sugar or cocoa powder.
Roll Dough into Cake Balls
Extend the DoughEZ mat on counter surface. Assembled guide sticks into open pastry frame . Set on top of mat. Turn out dough onto mat and within frame. Gently press down dough with a sheet of way or parchment paper then cover dough with top of mat. Use rolling pin to flatten dough to the 1″ in thickness. Use a bench scraper to mold into a rectangle. Then uncover, remove frame and use guide stick with bench scraper or dull blade to cut into 1″ square pieces. Roll into balls, place on parchment lined baking sheet or on top of DoughEZ mat. Place in freezer to chill.
Finally, Dip, Decorate and Serve
Use a tall narrow cup or container. Temper chocolate or melt candy coating over a double boiler or in Microwave on medium power at 30 sec. intervals. Continue to stir until melted smooth. Poke holes in styrofoam holder before starting to ensure easy transition. Now you are ready to dip. Submerge the cake ball completely to avoid having to twirl it around.
