1Preheat oven to 325° F
2In a small saucepan melt butter, sugar and corn syrup over medium heat until sugar dissolves. Remove from heat and cool slightly.
3Mix together, eggs, bourbon, vanilla and salt. Stir in chocolate chips and pecans.
4Pour mixture into pie shell.
5Bake in for 50 to 55 minutes, or until set and golden. May be served warm or chilled.
Single Pie Crust :
1 ½ cup of AP flour
1/2 cup shortening
1 tsp. white or cider vinegar
1 T. sugar
4-6 T. cold water
In bowl, cut in shortening, flour, sugar together until it resembles coarse crumbs.
Add vinegar and water a tablespoon at a time. Mix together until it forms a soft ball.
Use a lightly floured Dough EZ mat to roll out pastry. Slide back top cover of the Dough EZ mat.
Transfer rolled out pastry directly to pie pan. Chill prepared pie shell while preparing filling.
1 cup sugar
1 cup dark corn syrup
1 stick of butter
¼ cup bourbon
1 tsp. vanilla
½ tsp. salt
1 cup of semi-sweet chocolate chips
1 cup pecan halves and ¼ cup chopped pecans
